Jovana Glušac
Jovana is a Senior Researcher in the Center for Biosystems at the BioSense Institute. She obtained PhD in Biology from Banja Luka University in collaboration with Technion-Israel Institute of Technology (Faculty of Biotechnology and Food Engineering). From 2019 to 2022 she was Lady Davis Postdoctoral fellow at the same institute and was awarded the Hershel Rich Technion Innovation Award for work focusing on cultivated meat technology and plant-based fat mimetics. From 2022 to 2024 she held the position of Head of Food R&D at Israeli startup Oshi. In this role, she led a team responsible for new product development (NPD), focusing on creating innovative formulations, developing texture and flavor for plant-based salmon. Currently, she is involved in ANTARES project. Main Research Interests: alternative proteins, plant proteins, yeast derived proteins; enzymes; functionalization and modifications of proteins; proteins-based o/w emulsion, gels, foams; oleogelation; plant-based analogues, cultivated meat technology, food product development.
